What is mochi?
Mochi is Japanese rice cake made from cooked mochi gome, a sweet rice variety. Traditionally, the mochi-gome glutinous rice is transformed into the typical soft and elastic rice dough during hours-long processes by beating it with huge wooden hammers and a lot of dexterity. The quality of the glutinous rice as well as the duration and technique of rice pounding play an important role. The finished dough is then shaped into small balls or similar and, depending on the mochi variety, refined with fillings and toppings. Daifuku mochi, in which the dough has sugar added and the filling is sweet red bean paste, are especially popular.
Mochi are traditionally served on special occasions in Japan, with family members usually preparing their own rice cakes. Also for the New Year festival, which takes place according to the lunar calendar around the end of January, mid-February, dedicate a lot of rice cakes served.
